<p><strong>Preparazione:</strong></p>
<p>Lavate il cavolo e tagliatelo a pezzi grossolanamente .</p>
<p>Pulite e tagliate la cipolla quindi tritatela .</p>
<p>In una padella inaderente fate scaldare, a fiamma media, poco olio extravergine di oliva quindi aggiungete le cipolle tritate.</p>
<p>Quando le cipolle avranno preso calore aggiungete i pezzi di cavolo e mezzo bicchiere di acqua. Coprite e fate cuocere a fiamma moderata.</p>
<p>Di tanto in tanto aggiungete dell’acqua in modo da portare a cottura il cavolo. Salate e pepate a piacere.</p>
<p>Quando il  cavolo comincerà a sfaldarsi spegnete il gas e, usando il frullatore ad immersione, frullate il tutto fino ad ottenere una crema densa.</p>

<p>Servite con una spolverata di peperoncino in polvere e delle foglioline di maggiorana fresca come guarnizione.</p>

<p><strong>Preparazione:</strong></p>
<p>Pulite il petto di pollo e tagliatelo a cubetti.</p>
<p>Pulite il peperone dalla buccia e dai semi quindi tagliatelo a fettine non troppo sottili. Fate lo stesso con la cipolla.</p>
<p>Mettete la cipolla e il peperone in due ciotoline con dell’acqua in modo che perdano parte del loro sapore forte.</p>
<p>In un mortaio pestate i grani di pepe rosa, semi di cumino e di finocchio insieme al sale grosso fino a farli diventare una polvere.</p>
<p>Fate scaldare il wok e versateci pochissimo olio di semi. Quando l’olio sarà ben caldo fate saltare a fiamma alta i cubetti di pollo, pochi per volta, fino a quando non avranno cambiato colore.</p>
<p>Man mano che saranno pronti metteteli in un piatto coperti con della stagnola.</p>
<p>Pulite il wok e rimettetelo sul fuoco. Aggiungete poco olio di semi, le verdure scolate dall’acqua e i piselli. Dopo circa un minuto aggiungete l’aglio, mezzo bicchiere d’acqua e un cucchiaio di estratto di pomodoro.</p>
<p>Mescolate bene e, quando il fondo di cottura sarà quasi asciutto, aggiungete il pollo. Mescolate , aggiungete le spezie pestate e quelle in polvere e fate cuocere a fiamma alta fino a quando il fondo non sarà ben ristretto.</p>
<p>Un attimo prima di impiattare aggiungete le foglie del sedano tritate grossolanamente al coltello.</p>
<p>Servite subito.</p>

<p>Pulite le cipolle fresche e lavatele. Tagliatele a fettine molto sottili e fatele appassire a fiamma moderata con un filo di olio di semi. Quando le cipolle saranno morbide spegnete la fiamma e fate raffreddare.</p>
<p>Sbattete le uova, salatele e pepatele a piacere. Aggiungete le cipolle e mescolate bene.</p>
<p>Ungete con olio di semi una padella inaderente e fatela scaldare. Versate il composto e abbassate la fiamma. Coprite e fate cuocere per qualche minuto. Di tanto in tanto controllate che la frittata non si stia attaccando alla padella.</p>
<p>Quando la superficie si sarà solidificata giratela utilizzando un piatto e proseguite la cottura per qualche minuto.</p>
<p>Impiattate e guarnite con qualche foglia di basilico spezzata a mano.</p>

<p><strong>Preparazione:</strong></p>
<p>Pulite la verza della foglie più coriacee. Dividetela in quattro quarti ed eliminate il gambo centrale. Tagliatela a striscioline e quindi a quadratini piccoli.</p>
<p>Lavate in acqua e sbollentate per circa 6 minuti in acqua bollente salata.</p>
<p>Nel frattempo cuocete l’orzo seguendo le indicazioni della confezione. Scolatelo quando sarà al dente,</p>
<p>Tritate finemente lo zenzero fresco e l’aglio privato dell’anima. Fateli soffriggere in poco olio extravergine di oliva quindi aggiungete la verza e l’orzo. Mescolate bene, aggiungete un bicchiere d’acqua e proseguite la cottura.</p>
<p>Quando l’acqua sarà evaporata condite con un filo di salsa di soia e con le spezie a piacere. Mescolate e servite subito con della menta e maggiorana fresche.</p>

<p>Questa operazione è importante anche per non far attaccare tra loro le patate durante la cottura.</p>
<p>Disponete le sfoglie sulla carta assorbente e asciugatele bene.</p>
<p>Fate scaldare abbondante olio di semi fino alla temperatura di circa 150° e friggete le patate.</p>
<p>Quando saranno ben dorate e croccanti scolatele su carta assorbente, salate e servite subito.</p>

Infine incorporate gli albumi montati avendo cura di mescolare lentamente dal basso verso l&#8217;alto.</p>
<p>Versate il composto in una teglia imburrata e infarinata e disponete nel forno già caldo per una mezz&#8217;ora circa a 180°.</p>

<p><strong>Preparazione:</strong></p>
<p>Pulite il cuore dal grasso in eccesso e tagliatelo a fettine non troppo sottili.  Pulite l’aglio, dividetelo a metà e privatelo dell’anima quindi mettetelo a rosolare in una padella inaderente con poco olio extravergine di oliva.</p>
<p>Aggiungete la carne prima che l’aglio si bruci e fatele cuocere a fiamma bassa. Aggiungete mezzo bicchiere di vino bianco e coprite. Fate cuocere per circa 20 minuti girando di tanto in tanto.</p>
<p>Nel frattempo sbucciate i pomodori e tagliateli a cubetti. Aggiungete il pomodoro alla carne e rimuovete l’aglio. Proseguite la cottura fino a quando il sugo non sarà ben ristretto, circa 30 minuti.</p>
<p>Prima di servire salate e speziate a piacere quindi regolate l’eventuale acidità del pomodoro con una puntina di zucchero.</p>

<p>Pulite le patate e pelatele. Tagliatele a pezzi di dimensioni simili e tenetele da parte.</p>
<p>Fate cuocere le patate in abbondante acqua bollente salata a fiamma bassa fino a quando non saranno morbide. Attenzione a non cuocerle troppo.</p>
<p>Scolatele e tenetele da parte.</p>
<p>Quando saranno tiepide conditele con un filo d’olio extravergine di oliva, la cipolla rossa tagliata sottile, il rosmarino fresco tritato e un cucchiaio di senape.</p>
<p>Mescolate bene, speziate e servite tiepida.</p>

<p><strong>Preparazione:</strong></p>
<p>Lavate i pomodori, pelateli e rimuovete i semi interni. Tagliateli in 4 0 6 parti, a seconda della dimensione, e lasciateli da parte.</p>
<p>Pulite l’aglio (privato dell’anima centrale) e lo zenzero quindi tritateli molto finemente.</p>
<p>A fiamma vivace fate scaldare una padella e versateci poco olio extravergine di oliva. Quando l’olio sarà caldo aggiungete l’aglio e lo zenzero.</p>
<p>Fateli rosolare mescolando bene e, prima che si brucino, aggiungete i pomodori e una puntina di zucchero.</p>
<p>Mescolate bene e alzate la fiamma al massimo. Salate leggermente e speziate a piacere.</p>
<p>Quando i pomodori avranno rosolato per circa 2 minuti toglieteli dal fuoco.</p>
<p>Decorate con la menta e la maggiorana fresche quindi servite.</p>
<p>Ottimi anche freddi.</p>

<p><strong>Preparazione:</strong></p>
<p>Tagliate la verza in quattro spicchi e rimuovete il gambo da ognuno. Tagliate il resto a striscioline sottili e lavatele bene.</p>
<p>Lessate la verza in abbondante acqua bollente salata per circa 5 minuti quindi con la schiumarola trasferitela nel bicchiere del frullatore. Aggiungete qualche foglia di basilico fresco e frullate il tutto.</p>
<p>Se avete dei problemi a frullarla perché troppo densa aggiungete pochissima acqua di cottura.</p>
<p>Fate intiepidire quindi aggiungete le uova sbattute quindi il pane e il parmigiano grattugiati, un pizzico di sale, il pepe bianco e la paprika. Mescolate molto bene e controllate la consistenza: se è troppo liquida aggiungete poco pane grattugiato.</p>
<p>Trasferite il composto in una teglietta foderata di carta forno e infornate nel forno caldo a 180° per circa 30 minuti.  Togliete dal forno e rimuovete la teglietta. Rimettete in forno lo sformato solo con la carta forno per altri 20 minuti.</p>
<p>Quando si sarà dorato in superficie togliete dal forno e fate raffreddare completamente prima di servire.</p>
